1.) I don't usually purchase plain Greek yogurt, how can I use up the rest of the yogurt that doesn't go in the recipe?

Answer: Plain Greek yogurt can be used in place of sour cream in any recipe of your choice. It has the same tang and consistency! You can also toss the rest of the yogurt into your favorite smoothie recipe:) 

2.) Can I make part of this recipe in advance?

Answer: Yes, this recipe lends itself very well to a two-day preparation. Make the recipe through step 8 on the recipe card. The cheesecakes can be chilled overnight and up to 3 days before proceeding with the rest of the recipe. The chocolate curls can also be made in advance, placed in an airtight container, and refrigerated for up to 5 days. 

3.) What should my whip cream look like when it has reached stiff peaks?

Answer: When your whipped cream is nearing stiff peaks, you will notice that your whisk attachment (or beaters) are making circular tracks through the whipped cream. Stop your mixer and lift up the attachment. Remove the attachment and hold it up straight in your hand. If the whipped cream holds its shape in a nice peak, it is ready! See the picture below for guidance. 

 

4.) Why do we push the cookie crust down with a spoon after it has baked?
Answer: The cookie crusts rise while baking. Pushing the crust down in the center while it is still warm after baking, helps collapse the crust so that there is more room for delicious cheesecake filling!

  • How to soften cream cheese. An easy way to soften cream cheese is to take it out the fridge and allow it to come to room temperature. If you need to soften it more quickly, unwrap the cream cheese and discard the wrapper. Place on a microwave safe plate, and microwave on high for 15-20 seconds.
