1) What should my whip cream look like when it has reached soft peaks? What about stiff peaks?

Answer:

Whipping your cream to "soft peaks" means that the cream has thickened and holds its shape, but the peaks formed when you lift your beater gently fold over.

When your whipped cream is nearing stiff peaks, you will notice that your whisk attachment (or beaters) are making circular tracks through the whipped cream. Stop your mixer and lift up the attachment. Remove the attachment and hold it up straight in your hand. If the whipped cream holds its shape in a nice peak, it is ready! 

2) Can I use the same process to create a large trifle?

Answer:

Absolutely! Large trifles are a lovely showstopper, especially when they are served in a clear glass or plastic dish. When making a large trifle, ensure that each layer truly reaches the edge of the glass and can be seen from the outside of the dish. This includes the cookie and brittle layer as well. If you need to repeat layers beyond what is recommended for the smaller trifle cups, feel free to do so. 3) How do you store trifles? 

Answer: You can build the trifles all at once and keep them in a sealed container for up to 2 days. If you need them to last longer, you can keep the components in separate, sealed containers in the refrigerator. Assemble trifles just prior to enjoying. When each component is stored separately, trifles will keep up to 4 days.
